I&#039;ll be leaving for the colorado show this Saturday, but will be back to the chocolate trail on Monday.  I&#039;ll be speaking at Boscobel Restoration on November 19th...from bean to bar...following the cocoa trail of chocolate. We&#039;ll do some chat about my lecture right here on the blog...what better way to rehearse than to talk with Les Amis first.

I found if I used all-black cocoa in a brownie recipe, for example, the taste of it was too strong, almost bitter. I found in baking it worked better combined with a Dutched cocoa.</description>
